I guess you couldn't call tortilla pizzas a recipe, but rather a concept for cleaning out the fridge, getting everyone fed and keeping everyone happy all at once. It's a rare combination, and highly recommended.

Just take a whole wheat tortilla (or two) per person and cover it with what they like. We used varying amounts of cherry tomatoes, sausage, peppers and onions, olives, mushrooms, spinach and cheese. (No sauce; too wet.) Bake at 350 or 400 degrees until the tortillas are crisp.

Could this be simpler or more appealing? Here, let me take that one: No, it couldn't.
