Have you ever tried roasting green beans? The first time I did this the sheet pan was picked clean within minutes and one little girl was in tears - literally, crying - when I told her there were no more. Does it get better than that?
Roasted Green Beans
Preheat oven to 400 or 425, something like that.
Toss cleaned beans with a tablespoon or two of olive oil, sprinkle with salt, and lay them out in a single layer on a cookie sheet. Roast for 20 - 30 minutes depending on your oven temp. They'll be slightly crispy, caramelized and sweet. The best.
